Beet and Goat Cheese Salad
1 lb Beets
1/2 Red Onion
1/2 cup vinegar
1 tbsp sugar
1 Log goat cheese (flavor of your choice)
Chop up onion and combine vinegar and sugar, and stir together, and put aside to let pickle. Boil the beets - this will make peeling easy - then chop off tops (save for sauteing) and chop into bite size pieces, and let cool down. Grab onion and add to the beets, and then grab goat cheese from fridge, and break off pieces into the dish, and Enjoy!
